Sticky date pudding recipe

Here’s another simple cake recipe.

Sticky date pudding with butterscotch sauce.

Ingredients:

200g seeded dried dates

310ml boiling water

1 teaspoon bicarbonate of soda

50g unsalted butter chopped

100g firmly packed brown sugar

2 eggs beaten lightly

150g self-raising flower

BUTTERSCOTCH SAUCE

150g firmly packed brown sugar

300ml cream

80g unsalted butter

  1. Preheat oven to moderate. Grease deep 20cm round cake pan; line base with baking paper
  2. combine dates and the water in medium heatproof bowl. Stir in soda; stand 5 minutes.
  3. Blend or process date mixture with butter and sugar until pureed. Allow to cool.
  4. Add eggs and flour; blend or process until just combined. Pour mixture into prepared pan.

Bake uncovered in moderate oven for about 1 hour (cover with foil if pudding starts to overbrown). Stand 10 minutes; turn onto serving plate. Serve warm with butterscotch sauce.

Butterscotch sauce

Combine ingredients in a medium saucepan; stir over low heat until sauce is smooth and lightly thickened.

This is one of my favorites and can be served with added thickened cream.

I laughed at "firmly packed brown sugar" and at first glance I thought it said "buttercrotch sauce"

hammer, it's very easy to make and I know you'll love it. Maybe buttersnatch sauce?

Sounds too good. I will try it. Here we have a lot of dates, you know, and really cheap too. I never knew what to make of dates beside eating them as they are. Used to make some date-jam though.
